Dark Chocolate, Coconut, Quinoa Cookies

Tonight is game night with my church friends and I of course had to make some healthy snacks! I wanted to make cookies but I also wanted to stick with the healthy theme. So I created quinoa cookies. These are seriously… THE BOMB!!!

Ingredients:
1 1/2 cup uncooked quinoa
1 cup coco covered almonds
1/2 cup whole wheat flour
1/3 cup shredded coconut
1/3 cup dark chocolate chips
1/2 cup raw sugar or stevia
2 tbs dark coco powder
2 tbs coconut oil
2 eggs
1tsb vanilla extract
1/3 cup vanilla coconut milk

First off, preheat oven to 350 degrees and grease cookie sheet. Put your quinoa and almonds in food processor and pulse till fine. Mix the rest of the ingredients in with the quinoa and almonds in a large mixing bowl. Spoon cookie dough onto cookie sheet and bake for aprox 8-10 mins. ENJOY!!!
